I love pancakes and I love to eat healthy and while both of those things may look like they could never fit together. Trust me they can, they totally can. Enter these yogurt pancake poppers that are so delicious you’ll want to have them every day and so easy you can actually have them every day!

You know how pancakes can seem like one of those things that are incredibly tiring to make? You have to stand right next to the pan or griddling flipping every.single.pancake. I mean it’s pretty awesome to do it if you only have to make a couple but if you have to make a big batch (because you have a big family, have overnight guests or want to save them for later) it gets pretty boring fast. But with these yogurt pancake poppers you just mix everything together pour into a cupcake pan and let them bake, no flipping required. Making them in a cupcake pan also means that you can make a big batch FAST.

To make things easier I’m making them in a blender, so no need to get your bowls and spatulas and spoons out. Just drop everything into the blender and you are all set I mean it can’t get any better than that, right?

Except that yes it totally can get better!! They can be healthy and nutritious and packed with good for you ingredients like yogurt and oatmeal flour. These little poppers are super filling and will keep you fueled until lunchtime. They also are a great snack to keep on hand.

Eat them by themselves, topped with some homemade jam or if you want to balance things out (after all we only get to live once) serve them with a bit of whipped cream, it can be our little secret.

Yogurt Pancake Poppers

Ingredients

  • 1 Cup oatmeal flour
  • 2 Egg whites
  • ½ Cup yogurt

Instructions

  • Preheat the oven to 350F.
  • Grease and flour a cupcake pan.
  • In a bowl mix all the ingredients until the batter has no lumps left.
  • Pour the batter into the cupcake pan.
  • Take to the oven and bake until done (around 15 minutes).
  • Serve, top with some extra yogurt, and enjoy.
