Waffle Iron Sugar Cookies

One thing I hate about kitchen gadgets or appliances is if they only have one use.  I simply do not have the space for such useless – or use specific tools.  Well, I hate to admit it, but literally for the last 11 years, I’ve had one of those tools, a waffle iron.  (someday I want to get a waffle iron/ griddle combo… but the kind I want is expensive, so it has never happened) AND while I love pancakes… I don’t really like waffles.  Which means I am even more embarrassed to say I haven’t used my waffle iron in like 5 years… and I still have it?!!! (I keep telling myself I am not a hoarder, but seriously keeping a useless object for 5 years, makes me think that I have a problem…I mean, other than being a Remodelaholic!)

Well then Pinterest came into the picture.   I am pretty sure that Pinterest is destroying any hope I have of avoiding sugar…  ha. ha. Well, that really isn’t totally the truth, I have been doing a lot better this week, but I did see some waffle iron cookies, and I made them.  And let me just say that I will never be the same (size) again!  Kidding, but not about how good these cookies are.

The original article is from Fine Cooking, BUT I have to say I tried mine a little different, and I think I struck gold the first time.  We were having friends over last night so I made some chocolate chip and sugar cookies.  So which won?  The simple sugar cookie!  It was absolutely transformed into its superhero form by waffle ironing it… I am NOT kidding!  A ninja kick to your gut, awesome!

The difference?  Somehow with the sugar cookie there is this amazing crisp outside (unlike any cookie I know of) with the soft inside, the perfect amount of sweetness, but not too much… the chocolate chip cookies, if I had gone milk chocolate probably would have been better… but they just didn’t’ have a chance against how perfect the sugar cookies were..  And coming from a chocaholic that is saying A LOT!

But the other little secret?  On a few of the cookies, I sprinkled the colorful holiday sugar sprinkles onto the cookie, which created a sugar brulee on the top of the cookies… YUM!  Double YUM!  These are amazing!

Okay so here is the recipe super easy   ( I need to try this recipe in the oven, I haven’t made it before, but I bet they are really good)!

Waffle Iron Sugar Cookies

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 tsp salt
  • 1 cup butter softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  • In a small bowl, stir together flour, baking soda, baking powder, and salt. Set aside.
  • In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla.
  • Gradually blend in the dry ingredients.
  • Using a medium sized cookie scoop, scoop out your cookies, and set on a plate.
  • Spray griddle lightly with cooking spray.
  • Set the cookies on the griddle (I did 4 at a time).
  • Press lid of griddle down onto cookies, (optional:  lift lid after 10 second or so and add colored sugar; close).  I found that about 1 minute and 30 seconds was a perfect time, but test according to the heat of your waffle iron.
  • When they are golden, but not too dark lift the lid and allow them to sit for about 20 seconds.  This cools them just enough to remove them without them falling apart.  I used two butter knifes, to lift them out (I burned myself the first go round, they are VERY hot so be careful)  Allow to cool a minute or to, but be sure to eat them hot, they are the best right then!!

Notes

** For oven baked cookies, Preheat oven to 375 degrees F, Bake 8 – 10 minutes or until golden brown. Let stand on cookie sheet two minutes before removing to cool on wire racks.
 
*** This waffle iron technique would be great with store bought cookie dough when you need a QUICK dessert!   (nestle milk chocolate chip dough cannot be beat… just saying!)

  1. Yum! I haven’t tried cookies yet, but I love using my waffle iron for stuff besides waffles:) We have make cupcake waffles before with funfetti cake mix and they were so yummy! I just made some strawberry cake mix waffles with chocolate chips for Valentines Day too!

  2. OMG! I’m going home tonight and making these with my boys. I promised we would make Valentine’s cookies but I just haven’t been up to the rolling cutting rolling cutting. Besides, how cute are miniature waffles?

    1. I know, right? and I promise they are better than ever! (ps I have microwaved some store bought frosting til it was liquidy- then drizzled the frosting over the cookies! It was good!)

  3. Not looking good so far. On second batch and they are turning out fluffy. Something must be off with the baking soda/baking powder ratio.
